Resumen

La innovación es obligatoria para cualquier empresa o economía, porque genera riqueza y conocimiento, que contribuyen al desarrollo de los destinos turísticos. En el contexto turístico, estas variables son cruciales, ya que el fenómeno de la innovación ha aumentado a un ritmo muy rápido. Desde otra perspectiva, los sectores del alojamiento y la restauración suelen ser los más representativos de la economía turística, ya que proporcionan la mayor parte de los ingresos turísticos y de las oportunidades de empleo. Sin embargo, el sector de la restauración carece de estudios científicos, lo que significa que aún queda mucho por debatir en este contexto. En términos prácticos, esto significa que los empresarios necesitan comprender las necesidades de los consumidores, así como los principales cambios que se han producido en el presente, con el fin de prever acciones futuras. Existe una clara necesidad de que las partes interesadas comprendan la importancia de sus recursos únicos y los promuevan para crear ventajas competitivas y comparativas. Este documento examina la influencia de la innovación en el sector de la restauración, centrándose especialmente en la industria de la restauración. Se adoptó una minuciosa revisión bibliográfica para poder relacionar los tipos de innovación con el contexto de la industria de la restauración.
