Abstract

The adoption of sustainable practices, aiming at higher efficiency of resource’s use and lower production costs, is presently a goal of wine makers. The use of best available techniques, associated to the monitoring of water consumption indices, allow the constant monitoring of the use efficiency of this resource and its continuous improvement. The objective of this this study was to evaluate water use efficiency in four wineries, with the monitoring of water consumption and the evaluation of best practices. The consumption indices determined varied between 1.41 and 4.35 Lwater/Lwine for the wineries under study and it was verified that the highest consumptions are related to the filling/bottling period. From the evaluation of the practices it was verified that the qualification and sensibilization of the workers is possibly the most relevant factor. Consumption monitoring, awareness and setting goals are therefore essential.
