TECNOLOGIA VINAGREIRA, DESENVOLVIMENTO DE NOVOS PRODUTOS COM ADIÇÃO DE PHYSALIS PERUVIANA - VINAGRETE

RESUMO
Physalis peruviana é um fruto agridoce e dispendioso, pouco estudado em Portugal. A perecibilidade do fruto levou ao desenvolvimento de uma linha de produtos vinagreiros, com longa vida útil. Articulando ensaios tecnológicos, analíticos e sensoriais e aplicando processos de aromatização, foram testadas combinações daquele fruto e seu cálice, com vinagres simples e em mistura. O aroma suave e fragante dos protótipos em vinagre de álcool e o sabor intenso, sui generis, dos produzidos em vinagre de vinho branco, conduziu ao desenvolvimento de um vinagrete, o primeiro protótipo final desta gama de produtos. O protótipo cumpre os requisitos de estabilidade química e microbiológica e possui inovação e conveniência. Os frutos conservam-se íntegros. Neste vinagrete, a ausência de edulcoração e tratamento térmico e o blend de vinagres, aromatizado com extrato do cálice de physalis, introduzem a tónica gourmet e a mais-valia económica.
