Projecto industrial de uma queijaria
Abstract
No âmbito da disciplina de Seminário de Projecto da Licenciatura em Engenharia das Indústrias Agro-Alimentares, realizou-se este trabalho, do qual se apresenta aqui um pequeno resumo, pretendeu-se fazer um projecto de uma queijaria tradicional semi-mecanizada, que utilize técnicas de fabrico modernas, mas que permita a elaboração de um produto final que se assemelhe ao produto artesanal.
Na queijaria produzir-se-á queijo de ovelha, em unidades de 500 g e 1000 g, e ainda requeijão, em unidades de 120 g. Os objectivos de produção diária são 145 kg de queijo e 35 kg de requeijão, para um consumo de matéria-prima máximo de 800 litros de leite por dia.
