Preliminary study of a unit for industrial production of solid vinaigrette

This work is a preliminary study aimed to design a plant for the production of solid vinaigrette. The product in question, the solid vinaigrette, is assumed as innovative, consisting in an easy alternative for seasoning salads and leveraging new palatable flavours that captivate consumers. The work includes the study of the process with a description of the stages of preparation, the mass balances, description of the pieces of equipment, factory layout and a brief estimation of the required investment.Downloads
