The transformative role of education for sustainable tourism: the Eco-Schools Programme

Introduction: Sustainable food is a central focus of environmental education in higher education. By addressing topics such as food and organic farming, the Eco-Schools Programme contributes to the achievement of the Sustainable Development Goals (SDGs) by promoting conscious attitudes.
Objective: To analyse the contribution of the Eco-Schools Programme to the transformation of eating habits in higher education, based on the environmental diagnosis of ESTGL-IPV and the development of an action plan focused on sustainable food.
Methods: A qualitative approach was followed, based on a case study and action research. Data were collected in the first semester of 2023/2024 through Environmental Audit questionnaires administered to the institution and 175 participants. The analysis was performed using descriptive statistics.
Results: The average score of 11.26 out of 18 reveals moderately sustainable eating practices, with an emphasis on the consumption of fruit and vegetables. However, high consumption of sweets, low adoption of organic products and gaps in knowledge of the Mediterranean diet were observed.
Conclusion: The Eco-Schools Programme has proven to be effective in promoting sustainable eating practices. The proposed action plan, focused on composting, promoting organic products and reducing waste, reinforces the role of environmental education in responsible tourism.
