El papel transformador de la educación para el turismo sostenible: el Programa Ecoescuelas

Resumen

Introducción: La alimentación sostenible es un eje central de la educación ambiental en la enseñanza superior. El Programa Ecoescuelas, al abordar temas como la alimentación y la agricultura ecológica, contribuye al cumplimiento de los Objetivos de Desarrollo Sostenible (ODS), promoviendo actitudes conscientes.

Objetivo: Analizar la contribución del Programa Ecoescuelas a la transformación de los hábitos alimentarios en la educación superior, basándose en el diagnóstico medioambiental de la ESTGL-IPV y en la elaboración de un plan de acción centrado en la alimentación sostenible.

Métodos: Se siguió un enfoque cualitativo, basado en un estudio de caso y en la investigación-acción. Los datos se recopilaron en el primer semestre de 2023/2024, mediante cuestionarios de la Auditoría Ambiental, aplicados a la institución y a 175 participantes. El análisis se realizó con estadística descriptiva.

Resultados: La media de 11,26 puntos sobre 18 revela prácticas alimentarias moderadamente sostenibles, destacando el consumo de fruta y verdura. Sin embargo, se observó un elevado consumo de dulces, una escasa adopción de productos ecológicos y lagunas en el conocimiento de la dieta mediterránea.

Conclusión: El Programa Ecoescuelas ha demostrado su eficacia en la promoción de prácticas alimentarias sostenibles. El plan de acción propuesto, centrado en el compostaje, la valorización de los productos ecológicos y la reducción de los residuos, refuerza el papel de la educación ambiental en el turismo responsable.
