Integrated innovation and digitalization: capacity building in wine, gastronomy, and tourism

Introduction: Digital transformation has driven structural changes in the wine, gastronomy, and tourism sectors, requiring new skills and strategies to ensure competitiveness. In this context, continuous training through digital platforms becomes increasingly relevant.
Objective: To analyze the impact of emerging technologies in these sectors and propose a professional training model based on a Massive Open Online Course (MOOC).
Methods: A review of recent literature on technologies applied to the target sectors was carried out, complemented by the design of a training model adapted to digital reality.
Results: The proposed model addresses the shortage of qualified professionals by promoting flexible and accessible learning. The findings highlight improvements in efficiency, innovation, and regional development.
Conclusion: The articulation between technology and continuous training is essential for adapting to the challenges of the digital age, enhancing the sustainability and growth of the analyzed sectors.
